| Directions | Cook carrots until soft. Place carrots in blender while still warm with butter and blend until smooth. In large bowl, beat eggs until thick; add rest of ingredients to eggs. Add carrots and cinnamon to mixture. Place in greased casserole dish and bake at 350° for 45 minutes or until middle is set. |
