| Directions | Blend cornstarch and cold water in saucepan. Add boiling water, stirring until clear and thickened. Let stand until cool. With electric mixer, beat egg whites at HIGH speed until foamy; gradually add sugar and beat until stiff. Turn mixer to LOW speed; add salt and vanilla. Gradually add cornstarch mixture. Turn mixer to HIGH speed and beat. Put meringue on top of pie filling, sealing the meringue to the edges of the pie crust. Bake at 350° for 10 minutes or until lightly browned. |
