| Directions | PIE: Combine milk and sugar in saucepan. Let come to a near boil and stir in cornstarch, salt, eggs, and butter. Let cook for a few minutes and add 1/4 cup flaked coconut. Pour into baked pie crust. MERINGUE: Beat 4 egg whites and 4 tablespoons cold water at high speed until stiff. Add cream of tartar and salt. Beat one more minute. Add 1/4 cup sugar; beat until stiff. Spread over pie, sealing to edges of pie crust. TOPPING: Sprinkle 2 tablespoons of sugar and coconut over top of pie. Bake in a preheated oven at 350° for about 12 minutes. |
