| Directions | Combine coffee, potato starch, baking powder, eggs, sugar, vanilla, and 1 1/4 cups of the chocolate chips, mixing gently after each addition. Set aside. Melt remaining 2 cups of the chocolate chips with the oil. Add melted chocolate to batter, and mix well. Dough will be soft. Refrigerate or freeze for a few hours to make dough more manageable. Preheat oven to 350°. Form dough into small balls with small cookie scoop or by hand and place on parchment paper-lined pan. Bake for 10 minutes. |
