| Directions | In a large skillet, (I use a wok) sauté onions in oil until they are golden brown. Add defrosted potatoes, salt and pepper and cook for 2-3 minutes. Remove from heat. Add matzo meal and eggs to the potato mixture, mix well. Spray a 9 x13 baking pan with Pam. Pour potato mixture into prepared pan. Bake in a preheated 350° oven for 45-50 minutes or until top is golden brown. |
