Homemade Beef Stick - Recipe

Directions
Mix all ingredients well in bowl and refrigerate.

Once a day - Mix again, repeat for 3 days.

On the 4th day - Mix again and shape into 5 rolls.

Lay on broiler pan and bake at 140°-150° at least 8 hours.

In an electric roaster bake at 250°, turn and bake an additional 2 hours.

Note - Tenderquick salt is a curing salt and can be found at a Feed and Grain store if you can't find it at the grocery store.

Most ovens do not register 140° but the warm setting can be used and bake overnight or all day.

-5 teaspoons Mortons tenderquick salt
-3 teaspoons mustard seed
-2 teaspoons garlic salt
-2 1/2 teaspoons cracked black pepper
-1 teaspoon hickory smoked salt
-1/2 teaspoon Salt
