Combine peppers, sugar, and vinegar in a heavy kettle. Heat to boiling and boil for 10 minutes and remove from heat and let stand for 15 minutes. Return to heat and allow to boil for 2 minutes. Strain out peppers and stir in pectin. Skim if necessary. Add food color and seal in HOT sterilized glasses. Yield: 9 (8 oz) glasses of jelly. Good with meat- especially bar-b-que, hamburgers, frankfurters. |
