Directions
In large saucepan, combine sugar, Clear-jel or cornstarch, cinnamon, nutmeg and salt. Stir in hot water. Cook and stir until mixture boils and thickens. Add lemon juice; remove from heat. Add apples. Fill with hot jars; process in hot water bath for 20 minutes.

-4 1/2 cups sugar
-1 cup Clear-jel or cornstarch
-2 teaspoons cinnamon
-1/4 teaspoon nutmeg
-1 teaspoon Salt
-5 1/2 pounds or 7 quart apples, peeled, cored, sliced
-3 tablespoons lemon juice
