CUCUMBER-YOGURT SAUCE: Combine ingredients in a bowl and let stand while preparing pocket sandwiches.

POCKET FILLING: Coat saucepan with non-stick spray; sauté onion & garlic with veggie crumbles. Mix herbs into bread crumbs and stir into crumble mixture. Add 1/2 c. water and simmer until heated through.

ASSEMBLY: Cut pita rounds in half. Fill each pocket with hot mixture, adding lettuce, onions, and tomatoes as desired. Top with cucumber-yogurt sauce. Makes 8.
