Sauté pepper and onion in oil. Add chicken, mayonnaise and salsa, simmering about a minute. Spoon mixture down centers of tortillas and add cheese. Roll up tortillas snugly and put into a shallow 9x13 pan. Bake at 400° for 10 minutes, long enough to melt the cheese.
We loved this!! I blended the pepper and onion so it wasn't so chunky. Excellent!!
