| Directions | Microwave the sweet potato on high until done, approximately 8-10 minutes. Remove the flesh from the skin (or for more fiber, keep the skin on). Add: black beans (approximately 1/2 - 3/4 cup), corn (I use a bit less than a cup) and salsa. Mix together, microwave for another minute, enjoy! |
