| Directions | Ask meat man for a whole bottom-round roast, still in shrink wrap. Heat oven to 450°. Remove roast from shrink wrap and place in baking bag (in a pan with at least 2" sides), fat side up. Sprinkle generously with seasoning, and rub into meat with your hand. Secure and puncture bag as per instructions. Place in preheated oven for one hour. Lower oven temperature to 200° for 8-10 hours. Let sit at least 30 minutes in bag before opening. Save juices, slice into desired serving pieces, put into pan or roaster oven, and spoon juices back over. Serves about 30. |
