Preheat oven to 375 Take the sheet of Puff Pastry and cut into 4 squares (we will only use 2 squares for this recipe). On a cookie sheet place the 2 pieces of salmon and the 2 squares of Puff Pastry Lightly brush top of salmon with olive oil Salt and pepper to taste Bake for 20 minutes - Salmon should be pink and flaky. Puff Pastry will be golden Assemble on plate: 1. Start with the Puff Pastry on the plate 2. Spread pesto on top of Puff Pastry 3. Next layer with baby spinach leaves 4. Place Salmon on top of baby spinach 5. Top Salmon with a Tomato Slice Salt and pepper as desired |
