Preheat oven at 350°. Place the plain pork loin in a roasting pan, uncovered. Cook for 45 minutes at 350°. The roast will not be quite done, but that's okay. Let cool for a few minutes, then slice in pieces about 1/4 inch thick. Place in a casserole dish. Combine the rest of the ingredients in a small bowl to make the marinade. Microwave the marinade for about 1-2 minutes to dissolve the sugar. Pour over the sliced pork loin, cover and refrigerate overnight.
The next day, preheat the oven to 350°. In the covered casserole dish, cook the pork loin in the marinade for about 20 minutes. It should be done, if not cook longer until done.
