Allow meat to reach room temperature. Preheat oven to 350 degrees. Make small holes all over the prime rib & fill each hole with a slice of garlic. Season with salt & coarse pepper, place on rack inside a roasting pan & roast for about 2 hours until medium-rare, or until thermometer registers 135 degrees. Remove meat to rest, tent with foil to keep warm. Pour off fat grease & place the roasting pan on top of the stove over burners set on high heat. Add the wine to the pan drippings & cook over high heat until reduced, scraping the pan with a wooden spoon. Add the stock & cook until reduced by half. Whisk in the thyme & salt & pepper, to taste. Slice meat as desired & serve with thyme Au jus. |
