Poach fish*; drain. Place in large bowl. Flake fish using two forks. Melt butter in skillet; add onions and cook until tender. Remove from heat. Add to fish along with zest, juice, bread crumbs, salt, pepper and ginger. Beat eggs and add to fish. Mix and refrigerate 1 hour. Mix flour with pepper, using about 1/4 cup of the fish mixture. Make patties. Dredge patties in flour and brown in melted butter approximately 3 mins. each side. **To poach fish, place fillets in non-stick pan with lid. Bring enough water to cover fish to a boil. Add 1/4 onion sliced thin and a little salt. Boil 2 mins. Pour over fish, cover and place on low heat for 10 mins. or until fish flakes. |
