 | Directions |
- Brown ground beef, drain grease, return meat to pan and add the corn and its juice and mix in the taco seasoning. Simmer meat mixture for about 10 minutes.
- Prepare the cornbread according to directions.
- Spray (grease) an 8x8 baking dish. Put meat mix in the bottom, spread cornbread over the meat.
- Bake for 20 minutes at 350 degrees F., or until cornbread is golden brown.
- For spicy casserole or even plain corn bread: Add 1 - 4 oz can of diced green chili's to the cornbread mix. It is a little spicy but not too hot!
- You can double this recipe in a 9x13 pan.
