Toss beef with flour. Heat oil in a large skillet. Add beef and cook until meat is browned. Add tomatoes, broth, onions, pepper and thyme. Bring to a boil. Reduce heat and cover. Simmer for 45 minutes. Add potatoes and carrots. Return to a boil. Reduce heat and cover. Simmer an additional 45 minutes or until potatoes are cooked. |
