| Directions | Soak dried rice noodles for 1 hour in warm water. Mix peanuts, soy sauce, vinegar, fish sauce, sugar and cayenne in a blender. Preheat pan for 1 to 2 minutes on medium to high heat. Simmer peanut oil until hot. Add crushed garlic, stir 1 to 2 minutes. Add chopped yellow onion and shrimp (or chicken) to pan. Stir for 2 to 3 minutes. Add sauce mix from blender to pan, then add the water and bring to a boil. Drain noodles in colander, then add noodles to the mix in pan. Stir noodles in the sauce until water evaporates. Add bean sprouts and stir 1 to 2 minutes. Add spring onions and stir that 1 to 2 minutes. |
