| Directions | Preheat broiler. Chop veggies in food processor, or by hand according to how small you want them. Note-the smaller the better if you are serving children! Melt margarine in 10-inch oven-proof skillet. Add vegetables and saut until tender. In a separate bowl, beat eggs. Add cheeses of your choice, and seasonings to eggs. Mix well. Pour over vegetables in skillet and cook on top of the stove until the bottom begins to stick...DO NOT STIR! Remove skillet from stove and place under the broiler for approximately 2 min. or until set and browned. Remove from oven, slice like "pizza" and serve wedge with fresh fruit. * You can use more egg whites than whole eggs to reduce fat. Beat well. |
