Flatten breasts, dredge in crumbs. 1T. feta in folded breast, close with toothpick. Place in baking dish, drizzle with butter. Bake uncovered 400° for 25 minutes.
Combine spinach & basil in bowl, drizzle with vinegar & oil mixture. Sprinkle pepper toss.
Serve chicken on bed of salad.
