Season meat with dry ingredients. Slit small holes in the sides of meat and insert slices of garlic. Place meat in a Ziploc bag or container, and coat with Italian dressing. Ensure meat is well coated. Marinate roast in the refrigerator for no more than 12 hours. Remove meat from refrigerator and let stand in room for 30 minutes. Place in a shallow pan. Do not add water. Pre-heat oven to 475 degrees. Place meat in oven for 15-20 minutes or until browned. If possible, place on a small standing rack. Turn oven down to 350 degrees and roast uncovered for approximately 1 3/4 hours. When meat thermometer registers 160 degrees, the meat is well done. Roast can be served immediately and will be very tender. |
