| Directions |
- Soak codfish overnight and drain water at least twice. Boil codfish; once boiled drain water and break-up codfish to smaller pieces.
- Peel potatoes and julienne them. Fry potatoes until golden brown. While waiting for potatoes to fry, crack eggs and beat in bowl to be added last.
- Next thinly slice onion and garlic and put in sauce pan along with olive oil. Stove to be on medium heat.
- When onion is cooked (lightly golden color), lower stove to low. Add black pepper and codfish. Mix together, add fried potatoes, and stir.
- Add egg and mix together until egg mix is cooked. Make sure to continuously stir.
- Sprinkle with parsley and evenly dispose the olives on top.
- Ready to serve.
