| Directions | Squeeze juice and pulp out of one half of the lime over pork. Let stand for 20 minutes. Coat grill pan with cooking spray. Add pineapple and onion slices; cook on each side until onion is tender; about 5 minutes. Coarsely chop pineapple and onion; combine in a medium bowl with remaining 1/2 of lime juice/pulp, and jalapeno. Respray grill pan with cooking spray and sprinkle pork with salt and pepper; place on grill pan over med-high heat and cook for about 5 minutes on each side or until done. Do not over cook. While pork is grilling, cook 1 cup of rice in rice pot or in boiling water as directed. Serve pork with salsa and rice. |
