In large pot of boiling salted water, cook noodles until al dente. Drain in colander. Rinse with cold running water; drain well and set aside. In large bowl, combine cottage cheese, cheddar cheese, sour cream, onions, and salt. Stir in noodles and mix well. Turn into greased 8-cup casserole or baking dish. Sprinkle with Parmesan cheese and paprika. Bake in 350 oven for 25-40 minutes or until sauce bubbles. Yields 8 servings. I usually put in two casserole dishes and freeze one for another day. To reheat 1 serving (1 C) in microwave, use full power for 90 seconds. |
