Made in the manner of an artisan food, Molloni Pasta is produced in southeastern section of Italy in a region known as Apulia or Puglia in Italian. Made with durum wheat semolina flour, this variety of pasta uses bronze dies to create a very unique shape. The Molloni Pasta is formed into a spiral that looks like a short, thick vine wrapped securely around a very sturdy stem. The outer texture is rough, so that not only the shape but also the outer surface of the pasta retains all types of sauces well. Typically, the Molloni Pasta is difficult to find in stores so it is best to search in specialty food stores or kitchen ware shops.
