A traditional variety of rice served in southeast Asian areas, specifically Vietnam, where the rice flakes are manually produced to create a dish known as "banh com" or simply "com" as it is often called. The rice is harvested as a young grain, roasted and then flattened with a mortar and pestle to remove the husk. A rice dish that may be confused with green rice flakes is referred to as "green rice," which is not the same dish nor is it prepared with green rice flakes.
