Textured Sausage

A variety of sausages that contain chunks of meat suspended within the sausage mixture which, when sliced, forms a mosaic pattern. Examples of this type of sausage are schinkenwurst, tongue sausage, jagdwurst, headcheese, and zungenwurst.
