A type of noodle soup common in Vietnam that is made with rice noodles (banh pho), vegetables, pieces of meat thinly sliced, and various herbs. Most often, beef is used in making Pho. In addition, onions, ginger, mung bean sprouts, limes, and cilantro are also added. Similar to a French food known as pot-au-feu, Pho is prepared by cooking the ingredients very quickly in a thinned hot broth made from chicken stock. The steaming hot broth is poured over the meat and noodles so that it cooks and enhances the flavor of the the meat and other items in this food dish.
