A name given to an Italian soup that is often served for holidays or events, but is not actually a soup served specifically for weddings. Although Italian Wedding Soup may be served for the marital occassion, it is basically a name given to and associated with an enjoyable event that generations of Italians have served for celebrations. The typical ingredients for Italian Wedding Soup may include ground veal or pork made into small meatballs with eggs and breadcrumbs, and then cooked in a chicken stock with spinach, parsley, shredded Parmesan or Romano cheese, soup pasta (acini de pepe), minced onions, salt, pepper, seasonings of choice. Some vegetables may be included as well, such as celery, carrots, or zucchini.
