A type of Iranian flatbread prepared with wheat bread flour that is made into a variety of shapes and sizes. It is often formed into small, rounded rectangles, diagonally slashed several times, and resembling flattened buns. Barbari is also made into larger flat rounds up to a foot in diameter. The bread is yeast leavened and it is often flavored with olive oil, which can be brushed on before baking. Some variations are also flavored with assorted spices or seeds.
