Pronounced shah-blee. White wine produced in the Chablis district of the Burgundy region of France. 100% Chardonnay grape varietal based. The 4 appelations of the Chablis district are: (1) Chablis Grand Cru, (2) Chablis Premier Cru, (3) Chablis, and (4) Petit Chablis
Chablis labled Grand or Premier are of the highest quality. Also, those from the following Grand Cru vineyards: (1) Blanchots, (2) Bougros, (3) Les Clos, (4) Grenouilles, (5) Les Preuses, (6) Valmur, and (7) Vaudésir.
A true Chablis is produced only in France, all others are likely to be a sweet, inexpensive, low quality jug wine.
Characteristics: A dry, light, crisp delicate white. Fruity characteristics of apple, tropical fruit and pineapple with hints of mineral and florals. Oak aging brings out creamy, soft, vanilla characteristics while Steel ageing brings out crisp, green apple characteristics.
Ageing: Recommend 10 years for premier Chabli’s. Oak ageing brings complexity to Chabli but is not as common as steel ageing.
Serving temperature: Serve at a temperature of 50-55º F.
Food pairings: Fish, fish with rich and hearty sauces, grilled fish, shellfish, poultry, pasta, salad, and semi-soft cheeses.
