An Italian olive paste, used as a food spread or sauce, that is made with green olives pureed and mixed with olive oil, anchovies, capers, lemon juice, vinegar, red chiles, garlic and assorted herbs and seasonings. This paste is generally served on fresh bread, but also is served on crackers and toasted breads, or served as a sauce for pasta, salads, meats, fish, and vegetables. There are a variety of olive spreads produced that use some form of the Italian version to create this condiment. Oliverde may also be referred to as an Olive Spread or Olive Paste. The Olive Paste made with black olives is referred to as Olivada.
