A French term that means "made of rags", which is similar to the appearance of the food derived from this term. As a food term, it refers to the shredding of raw leafy lettuce, sorrel, or any leafy herbs that can be stacked together, rolled into a cylinder shape, and then sliced thinly at a 90-degree angle from the length of the rolled leaves. When unrolled, the resulting thin strips are used to garnish pasta, salads, soups, and other dishes. They can also be sautéed to add a flavorful taste to a variety of dishes.
