Gammelost Cheese

A Norwegian goat's milk cheese that has a very strong flavor and a texture that ranges from soft to very hard depending on its age. It is also noted for its low-fat content, which is usually around 5 percent. Gammelost is usually served as a dessert cheese and goes well with alcoholic beverages such as gin or aquavit.
