Gratte-Paille Cheese

A French cow's milk cheese that is similar to brie. It has a natural white rind that covers a creamy off-white cheese with a distinctive mushroom flavor. It is sold in small brick shapes and is excellent as a dessert cheese or as an addition to savory dishes such as potpies.
