Raw long or short grain rice that has been ground into a very fine powder. Flour made from long grain rice is used to make a soft, light bread and other baked goods. Flour made from short grain rice is a glutinous or sweet rice flour used to thicken sauces, puddings and some desserts, making some foods chewier if larger amounts of the flour are used in preparation. Depending on the variety of flour used, the consistency of the foods may range from very light and soft to somewhat gritty in texture. It may require several test recipes before the best results can be acheived. Rice flour may also be referred to as rice powder or rice starch.
