Milt

The sperm from the male fish is known as milt or soft roe. Its texture is creamy, not grainy like that of hard roe (eggs of female fish). The roe can be used raw or cooked and is used in luncheon dishes, as an hors d'oeuvre, or as a stuffing or garnish.
