A Mexican dish consisting of thin strips of cooked meat, typically beef or chicken, that are placed into a tortilla with other ingredients and rolled up to be eaten out of hand or on a plate. The meat for a fajita is marinated overnight in oil that is seasoned with lime juice, peppers, garlic, onion, and other seasonings. The meat is then grilled and served with warm tortillas as well as other garnishes such as salsa, guacamole, cooked vegetables, and refried beans. The ingredients are then placed on the tortilla and rolled up, similar to a burrito.
