A strong-flavored, highly spiced dish of meat, fish, and/or vegetables made in Eastern Indian kitchens. The word Curry can reference either a powder made from a mixture of different spices, a richly spiced sauce (gravy) added to foods, or a food dish with a variety of ingredients mixed with a curry sauce, since the term "curry" applies to all. When making Curry as a food dish, the ingredients are prepared in a Curry sauce made with curry powder and other spices added which serve to season the dish. There are hundreds of variations of curry dishes, all of which use the highly spiced sauce as a key ingredient. Since there is no specific recipe considered to be a standard or the traditional recipe for curry, the ingredients typically are derived from the preferences and flavors present in the regions preparing the food.
