A milk and/or broth-based soup made from the flesh of orange Sweet Potatoes. Typically, this soup contains bits of onion and garlic cooked in a chicken broth that is mixed with milk, yogurt or half-and-half as a base. In addition some of the other ingredients that may be added include pieces of meat (bacon or sausage), shredded cheese (Mozzarella or Parmesan), butter, celery, scallions, lemon juice, and nutmeg. All ingredients, except for the meat and cheese, are then pureed into a coarse or smooth consistency, depending on the desired texture. The rich flavor of the Sweet Potato flesh and the dairy base (if added) combine to create a hearty and healthy meal for lunch or dinner. If the texture of this soup is too thick, it can be lightened by adding more broth or milk, but it can also be thickened by reducing the amount of liquid ingredients added.
