Picnic Shoulder
7 of 20
not yet rated
A cut of pork taken from the upper portion of the foreleg, including a portion of the shoulder. It is also referred to as a picnic ham but is not a true ham because it does not come from the back leg. The cut is smoked, giving it a ham-like flavor. There is generally more waste because of the bone structure and sometimes the bone is removed. It is a little tougher than a regular ham but a good inexpensive substitution for a true ham.
