A French version of olive bread, made with a dough of bread flour or all-purpose flour that is studded with green or black olives. The dough can be formed into a variety of shapes before baking. Grated cheese is sometimes added to the dough and/or on top of the dough prior to baking. Pain aux olives originated in southern France and is also known as bread with olives, olive bread, French olive bread, and olive hearth bread.
