This cheese is made as a white or a golden orange smooth textured cheddar with flavors ranging from very mild as a fresh cheese to a nutty or sharp and tangy aged cheddar. It is marketed as a mild cheddar when aged for 3 months, a medium cheddar aged 6 months, a mature cheddar aged almost a year, and a very mature cheese when aged over a year.
