A cheese originally from Scotland, made from cow's milk, which combines a base of creamy but firm texture with the typical blue cheese veins. This cheese is very similar to a Stilton, being made in the same manner as Stilton, however with the addition of annatto dye added to the milk, which provides the distinctive orange-toned color. It is firm, yet somewhat crumbly and it provides a mild tangy blue flavor, slightly sour but sharper than Stilton, with a light caramel-like sweet aftertaste. Shropshire cheese is generally aged for 12 weeks or more.
