Small pasta shapes resembling rice or grain, which is used in soups and casseroles and is sometimes substituted for rice. Slightly plumper than rice, orzo can be found in Middle Eastern or Italian markets as well as a variety of food stores. Often referred to as Rosa Marina or Rosamarina, orzo will also be labeled as Schupfnudeln, Reiskornpasta, Kritharaki, Manestra, or pasta gallo pion. If not available substitute pastina, risi (riso), rosa marina, or rice.
