A soft, somewhat elastic-textured Mexican cheese made from skimmed cow's milk. It is white in color (Queso Blanco meaning "white cheese") and has a very creamy flavor that may contain a hint of lemon, due to lemon juice being used to coagulate the skim milk and whey when the cheese is made. Varieties of this cheese are also being made using milk with cream and coagulated with rennet, providing a creamier flavor. It is a good grilling or pan-frying cheese as it becomes soft and pliable when heated, but does not melt and become runny.
Queso blanco is used as a garnish, crumbled on top of many Mexican dishes or salads and as a stuffing for poultry, peppers, burritos, and enchiladas. A variation of this cheese is known as Queso Blanco con Frutas translated to mean "white cheese with fruit." It is a cheese that has bits of fruit such as pineapple and mango (Pina y Mango)added to enhance the flavor.
