A flavorful vegetable that is a cross between snow peas and garden peas. The Sugar Snap Peas are eaten in the pods and do not require shelling. As the peas mature, the pod increases in size creating an irregular or lumpy appearance to the pod. Sugar snap peas have a crispy texture and a sweet flavor. They should be served raw or only cooked for a short time in order to retain their crispness. When fully matured, the pea pod develops a string-like growth that runs the length of the pod. Prior to eating, remove this string from the pod. Sugar Snap Peas are also referred to asSugar Peas. Sugar snap peas are available spring to fall. When selecting, choose those with bright green coloring, and plump, crispy pods. Place in a plastic bag and store in the refrigerator for up to three days.
