A type of fish paste made with Anchovies that are combined with cream, olive and corn oils, sugar, spices and seasonings. Anchovy Paste is similar in consistency to a paté and is served as a garnish or topping for a variety of appetizers, providing a salty and at times tangy flavor. Some of the typical uses for this paste include spreading it as a topping for crackers, pizza or bread, using it as an ingredient in salad dressings, or combining it with sauce ingredients to enhance the flavors of different meat, fish and poultry sauces. Anchovy Paste is a common topping added to the traditional onion tart made in France which is referred to as a Pissaladière. When made in the traditional manner, this savory tart is topped with a pissala, which is a fish paste that combines anchovies with sardines.
