A small potato blend made from a mixture of ingredients that are formed into various shapes such as stars, baskets, crowns, roses, leaves, or uniquely shaped patties to be served as a garnish to accompany meats and poultry. Consisting of mashed or riced potatoes, eggs, butter, heavy cream, Swiss cheese, and seasonings, such as salt, pepper, and nutmeg, the ingredients are mixed together, shaped into the desired form manually or with the use of a pastry bag, and baked to a golden brown in an oven. To enhance the browning, an egg wash is often applied to the surface of the shape. The baked shapes are then placed around a platter, decorating the edges of baked meats, quail, duck, turkey, or chicken. It was a creation believed to have been made for a British duchess, thus the origin of the name.
